Stuffed Bell Peppers Recipe
Almost everyone has a jar of pasta sauce in their pantry. But what do you do with it other than make pasta? Cooking spaghetti or lasagna are delicious ideas, but pasta sauce can be used for much, much more.

Pasta sauce is an inexpensive staple that we can stock up on when it is on sale or when there are good coupons available. Here is a great recipe for stuffed bell peppers that you can make with pasta sauce.  You can use any color bell pepper: red, yellow, orange or green.  They all taste wonderful.

Ingredients:

4 large bell peppers, any color
1 lb lean ground beef
2 tablespoons chopped onion
1 cup cooked rice
1 teaspoon salt
1 clove garlic, finely chopped
2 cups pasta sauce
3/4 cup shredded mozzarella cheese

Directions:
  1. Cut thin slice from stem end of each bell pepper to remove top of pepper.
  2. Remove seeds and membranes and rinse peppers.
  3. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown.
  4. Drain.
  5. Stir in rice, salt, garlic and 1 cup of the tomato sauce; cook until hot.
  6. Heat oven to 350 degrees F.
  7. Stuff peppers with beef mixture.
  8. Stand peppers upright in un-greased 8-inch square glass baking dish.
  9. Pour remaining pasta sauce over peppers.
  10. Cover tightly with foil.
  11. Bake 10 minutes.
  12. Uncover and bake about 15 minutes longer or until peppers are tender.
  13. Sprinkle with cheese.
