Campfire Barbecue Bacon Chicken Recipe




Ingredients:
Heavy duty aluminum foil
1 1/4 lb. potatoes, cut in to small chunks
2 tsps. oil
1 tbsp. Italian seasoning
3/4 tsp. salt
1/4 tsp. pepper
4 boneless skinless chicken breasts
1 1/2 tsps. barbecue seasoning
4 slices cooked bacon, halved crosswise
1 cup shredded Cheddar cheese
1/4 cup barbecue sauce

Directions:
  1. Heat grill.
  2. Spray sheets of foil with cooking spray.
  3. In a medium bowl, drizzle potatoes with oil.
  4. Sprinkle with Italian seasoning, salt and pepper.
  5. Stir until evenly coated.
  6. Season chicken with barbecue seasoning, and place on center of each sheet of foil.
  7. Spoon potato mixture around each chicken breast.
  8. Lay bacon slices over chicken.
  9. Seal in a tent pack.
  10. Grill over medium heat for about 10 minutes.
  11. Rotate packs 1/2 turn.
  12. Cook 10 minutes longer or until juice of chicken is clear when center of thickest part is cut.
  13. Sprinkle potatoes with cheese.
  14. Top each chicken breast with 1 tbsp. barbecue sauce.
  15. Serve with your camping buddies and enjoy!
