Campfire Barbecue Bacon Chicken Recipe
Heavy duty aluminum foil
1 1/4 lb. potatoes, cut in to small chunks
2 tsps. oil
1 tbsp. Italian seasoning
3/4 tsp. salt
1/4 tsp. pepper
4 boneless skinless chicken breasts
1 1/2 tsps. barbecue seasoning
4 slices cooked bacon, halved crosswise
1 cup shredded Cheddar cheese
1/4 cup barbecue sauce
Directions:
- Heat grill.
- Spray sheets of foil with cooking spray.
- In a medium bowl, drizzle potatoes with oil.
- Sprinkle with Italian seasoning, salt and pepper.
- Stir until evenly coated.
- Season chicken with barbecue seasoning, and place on center of each sheet of foil.
- Spoon potato mixture around each chicken breast.
- Lay bacon slices over chicken.
- Seal in a tent pack.
- Grill over medium heat for about 10 minutes.
- Rotate packs 1/2 turn.
- Cook 10 minutes longer or until juice of chicken is clear when center of thickest part is cut.
- Sprinkle potatoes with cheese.
- Top each chicken breast with 1 tbsp. barbecue sauce.
- Serve with your camping buddies and enjoy!
