Ingredients:

1 can refried beans
1 cup light sour cream
1 cup guacamole
1.5 cups homemade chunky salsa drained
2 small cans sliced black olives
1.5 cup shredded Mexican cheese
1 jalapeno sliced

Instructions:



  • In an 8 x 8 casserole dish add the first layer of refried beans to the bottom of the dish.
  • Layer on top of the refried beans one layer of sour cream.
  • Add guacamole or mashed avocado layer on top of the sour cream.
  • Drain salsa in a colander to remove excess liquid
  • Spread salsa over the guacamole layer.
  • Evenly distribute sliced black olives on top of the layer of salsa.
  • Evenly distribute shredded Mexican cheese on top of the black olives.
  • Evenly distribute jalapeno slices across the top of the cheese.
  • Serve and enjoy!

    Ingredients:

    3 ripe mangos, diced
    1 medium red bell pepper, chopped
    1/2 cup red onion, chopped
    1/4 cup packed fresh cilantro leaves, chopped
    1 jalapeño, seeded and minced
    1/4 cup lime juice
    1/4 teaspoon salt

    Instructions:


  • In a serving bowl, combine the prepared mango, bell pepper, onion, cilantro and jalapeño.
  • Add lime juice and mix well.
  • Season to taste with salt.
  • Let rest for 10 minutes or longer.
  • Serve and enjoy!

    The Kentucky Derby is the first race in the Triple Crown horse race. It happens every year in Kentucky and is a huge celebration. There are many recipes that are associated with this event, one of which is the Kentucky Derby Pecan Pie, made with Kentucky bourbon whiskey. If you can't make it to Kentucky to watch the race, be sure to make this delicious recipe to serve while you watch it on television.

    Ingredients:

    3 extra large eggs
    2 tbsps. corn oil
    1 tbsp. bourbon whiskey
    1 tsp. vanilla extract
    3/4 cup all-purpose flour
    3/4 cup white sugar
    3/4 cup packed light brown sugar
    1 1/8 cups butter, softened
    1 1/2 cups chopped toasted pecans
    9 oz. semisweet chocolate chips
    1 (9 in.) unbaked pie crust

    Instructions:



  • Preheat oven to 325 degrees F (165 degrees C).
  • Beat eggs in a large mixing bowl with an electric mixer on high speed until eggs are foamy, about 3 minutes.
  • Beat corn oil, bourbon whiskey, and vanilla extract into the eggs until just incorporated.
  • Beat flour, white sugar, and light brown sugar into egg mixture until smoothly blended, then beat in butter.
  • Gently stir pecans and chocolate chips into the filling.
  • Fit the pie crust into a 9-inch pie dish and pour the filling into the crust.
  • Bake in preheated oven until top is golden brown and a knife inserted halfway between the center and edge of the filling comes out clean, 55 to 60 minutes.
  • Cool the pie on a wire rack for at least 15 minutes before serving.

    Traditional Maryland Crabcakes made with Chesapeake Maryland Blue Crab and Old Bay Seasoning

    Ingredients:

    1 lb. backfin Maryland blue crab
    2 slices dried white bread, crusts removed
    1 sm. amount of milk
    1 tbsp. mayonnaise
    2 teaspoons parsley flakes
    1/2 teaspoon yellow mustard
    1 tsp. Old Bay seasoning, plus more for sprinkling
    1/4 tsp. salt
    1 egg beaten
    Tartar sauce or cocktail sauce for serving

    Instructions:





  • Break bread into small pieces in large bowl.
  • Moisten with milk.
  • Add mayonnaise and mustard then mix well.
  • Add remaining ingredients and mix some more.
  • Shape into 4 patties.
  • Refrigerate patties 30 minutes to help keep them together when cooking.
  • Broil or fry until golden-brown on both sides.
  • Sprinkle with more Old Bay.
  • Serve with either tartar or cocktail sauce and enjoy!

    Ingredients:

    2 tablespoons olive oil
    1 tablespoon paprika
    2 teaspoons dried oregano
    Salt and black pepper to taste
    2 lbs. chicken breasts, diced
    2 tablespoons olive oil, divided
    3 cloves garlic, crushed
    1 teaspoon crushed red pepper flakes
    2 cups uncooked short-grain white rice
    1 pinch saffron threads
    1 bay leaf
    1/2 bunch parsley, chopped
    1 quart chicken stock
    2 lemons, zested
    2 tablespoons olive oil
    1 Spanish onion, chopped
    1 red bell pepper, coarsely chopped
    1 lb. chorizo sausage, casings removed and crumbled
    1 lb. shrimp, peeled and deveined

    Instructions:


  • In a medium bowl, mix together 2 tbsps. olive oil, paprika, oregano, and salt and pepper.
  • Stir in chicken pieces to coat.
  • Cover, and refrigerate.
  • Heat 2 tbsps. olive oil in a large skillet or paella pan over medium heat.
  • Stir in garlic, red pepper flakes, and rice.
  • Cook, stirring, to coat rice with oil, about 3 minutes.
  • Stir in saffron threads, bay leaf, parsley, chicken stock, and lemon zest.
  • Bring to a boil, cover, and reduce heat to medium low.
  • Simmer 20 minutes.
  • Serve and enjoy!

    Ingredients:

    2 cups semisweet chocolate chips
    1 cup peanut butter
    2 cups chow mein noodles
    Jelly beans

    Directions:
    1. Line a baking sheet with waxed paper
    2. Place chocolate chips and peanut butter in a microwave-safe container.
    3. Heat on 50% power for 1 minute.
    4. Stir, and repeat, until chocolate chips are melted.
    5. Stir in chow mein noodles until fully coated.
    6. Drop by tablespoonsful onto prepared baking sheet, forming a nest shape with your fingers.
    7. Place a few peanuts in the center of each nest for eggs.
    8. Refrigerate until firm.

    4 medium apples
    1/4 cup quick cooking oatmeal
    1/4 cup flour
    1/2 cup brown sugar
    1 tablespoon cinnamon
    1/4 cup margarine

    Instructions:

  • Preheat the oven to 350 degrees F.
  • Grease the bottom and sides of the square pan.
  • Slice the apples..
  • Spread the sliced apples on the bottom of the pan..
  • Cut the margarine into small pieces and put in a medium-sized bowl..
  • Add the oatmeal, flour, brown sugar and cinnamon..
  • Using two knives, cut the margarine into the mixture until it looks like small crumbs.
  • Sprinkle the mixture over the top of the apples.
  • Bake in the oven for about 20 minutes.
