Cinco de Mayo is coming up soon so I will be posting some great Mexican recipes to help you celebrate in the next coming weeks.

Here is a tasty guacamole recipe that you will love. It goes great on tacos, burritos, nachos and many other Mexican foods.

Mexican Guacamole Recipe for Cinco de Mayo



Ingredients:

3 avocados - peeled, pitted, and mashed
1 lime, juiced 1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 Roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper (optional)

Directions:
  1. In a medium bowl, mash together the avocados, lime juice, and salt.
  2. Mix in onion, cilantro, tomatoes, and garlic.
  3. Stir in cayenne pepper.
  4. Refrigerate 1 hour for the best flavor.

Baked Parmesan Fish Recipe for Good Friday

Ingredients:

1/3 cup grated parmesan cheese
1/3 tbsp. flour, all-purpose
1 tsp. thyme sprigs, leaves removed and crushed
4 fish fillets, white fish, 6 ounces each
1 med. onion, chopped
1 cup halved mushroom caps
1/2 cup green onions. finely sliced
1 cloves garlic, crushed

Directions:
  1. Preheat oven to 350 degrees F.
  2. Place cheese, flour and thyme in paper bag.
  3. Individually coat fish by gently shaking in bag; discard coating ingredients.
  4. Place fillets in baking pan on rack. Bake for 20 minutes or until fish flakes easily when tested with fork.
  5. Heat skillet over medium-high heat. Add onion, mushrooms, green onions, and garlic.
  6. Cook, stirring frequently, until onions are tender. Season with ground black pepper.
  7. Serve baked fish topped with mushroom mixture.

For those of us on a budget, it is still possible to have a gourmet meal while still observing our Catholic faith. Even if you are not Catholic, and just have a lot of canned tuna fish in your pantry, this delicious tuna patty recipe is a great one to try. It is using one of the staples that everyone has in their cupboard and turns it into a meal to be proud of.

Who needs expensive crab or salmon to make patties. You can use canned tuna fish and it tastes delicious.

Tuna Patty Recipe

Ingredients:

2 eggs
2 teaspoons lemon juice
3 tablespoons grated Parmesan cheese
10 tablespoons Italian-seasoned bread crumbs
3 (5 ounce) cans tuna, drained
3 tablespoons diced onion
1 pinch ground black pepper
3 tablespoons vegetable oil

Directions:

Beat eggs and lemon juice in a bowl; stir in Parmesan cheese and bread crumbs to make a paste. Fold in tuna and onion until well-mixed. Season with black pepper. Shape tuna mixture into eight 1-inch-thick patties.
Heat vegetable oil in a skillet over medium heat; fry patties until golden brown, about 5 minutes per side.

This is a great recipe to serve for Easter brunch or a Sunday Church fellowship.

Oatmeal Pecan Waffles Recipe


Ingredients:

1 cup whole-wheat flour
1/2 cup quick-cooking oats
2 teaspoons baking powder
1 teaspoon sugar
1/4 cup unsalted pecans, chopped
2 large eggs, separated
1 1/2 cup fat-free (skim) milk
1 tablespoon vegetable oil
Fruit Topping Ingredients:
2 cups fresh strawberries, halved
1 cup fresh blackberries
1 cup fresh blueberries
1 teaspoon powdered sugar
All berries may be substituted with frozen, thawed

Directions:

Preheat waffle iron.
Combine flour, oats, baking powder, sugar, and pecans in a large bowl.
Combine egg yolks, milk, and vegetable oil in a separate bowl, and mix well.
Add liquid mixture to the dry ingredients, and stir together. Do not overmix; mixture should be a bit lumpy.
Whip egg whites to medium peaks. Gently fold egg whites into batter.
Pour batter into preheated waffle iron, and cook until the waffle iron light signals it’s done or steam stops coming out of the iron. A waffle is perfect when it is crisp and well-browned on the outside with a moist, light, airy and fluffy inside. (Or make pancakes.)
Add fresh fruit and a light dusting of powdered sugar to each waffle, and serve.

Stuffed Bell Peppers Recipe
Almost everyone has a jar of pasta sauce in their pantry. But what do you do with it other than make pasta? Cooking spaghetti or lasagna are delicious ideas, but pasta sauce can be used for much, much more.

Pasta sauce is an inexpensive staple that we can stock up on when it is on sale or when there are good coupons available. Here is a great recipe for stuffed bell peppers that you can make with pasta sauce.  You can use any color bell pepper: red, yellow, orange or green.  They all taste wonderful.

Ingredients:

4 large bell peppers, any color
1 lb lean ground beef
2 tablespoons chopped onion
1 cup cooked rice
1 teaspoon salt
1 clove garlic, finely chopped
2 cups pasta sauce
3/4 cup shredded mozzarella cheese

Directions:
  1. Cut thin slice from stem end of each bell pepper to remove top of pepper.
  2. Remove seeds and membranes and rinse peppers.
  3. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown.
  4. Drain.
  5. Stir in rice, salt, garlic and 1 cup of the tomato sauce; cook until hot.
  6. Heat oven to 350 degrees F.
  7. Stuff peppers with beef mixture.
  8. Stand peppers upright in un-greased 8-inch square glass baking dish.
  9. Pour remaining pasta sauce over peppers.
  10. Cover tightly with foil.
  11. Bake 10 minutes.
  12. Uncover and bake about 15 minutes longer or until peppers are tender.
  13. Sprinkle with cheese.

The quiche became popular in the seventies. This delicious egg dish can be served for any meal, breakfast, lunch or dinner. Therefore, it is the perfect recipe for an Easter brunch or dinner.

The Quiche Lorraine is one of the more popular varieties of the quiche. Although the quiche is now a classic dish of French cuisine, quiche actually originated in Germany, in the medieval kingdom of Lothringen, under German rule. The French later renamed the city Lorraine.

The word 'quiche' is from the German 'Kuchen', meaning cake.

Ingredients:

1 9 inch unbaked pie pie crust
6 slices bacon
1 onion, sliced
3 eggs, beaten
1 1/2 cups milk
1/4 teaspoon salt
1 1/2 cups shredded Swiss cheese
1 tablespoon all-purpose flour

Directions:
  1. Preheat oven to 450 degrees F (230 degrees C). Line pastry shell with foil.
  2. Bake in oven for 8 minutes.
  3. Remove foil and bake for an additional 5 minutes, or until crust is set and dry.
  4. Remove from oven and turn down temperature to 325 degrees F (165 degrees C).
  5. In a large skillet, cook bacon until crisp.
  6. Drain and reserve 2 tablespoons of drippings.
  7. Crumble the bacon and set aside. Cook onion in skillet with reserved drippings; cook until onion is tender and then drain.
  8. In a large bowl, mix together milk, salt and eggs.
  9. Stir in bacon and onion.
  10. In a separate bowl, toss cheese and flour together, then add to egg mixture.
  11. Mix well.
  12. Pour egg mixture into pie crust.
  13. Bake in preheated oven for 35 to 40 minutes, or until knife inserted in center of quiche comes out clean.
  14. If necessary, cover edge of crust with foil while baking to prevent burning or over-browning.
  15. Let stand for 10 minutes before serving.

Potato Chip Cookies Recipe


Ingredients:
3/4 cup butter
3/4 cup white sugar
1 egg yolk
1 1/2 cups all-purpose flour
3/4 cup crushed potato chips
1/2 cup chopped walnuts

Directions:
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, cream butter and sugar until smooth.
  3. Stir in the egg yolk.
  4. Add the flour and nuts, mix until well blended.
  5. Stir in the potato chips last, so they don 't get too crunched up.
  6. Roll the dough into walnut sized balls.
  7. Place 2 inches apart on an unprepared cookie sheet.
  8. Bake for 10 to 12 minutes in the preheated oven.
  9. Remove from cookie sheet to cool on wire racks.

Ingredients:
Heavy duty aluminum foil
1 1/4 lb. potatoes, cut in to small chunks
2 tsps. oil
1 tbsp. Italian seasoning
3/4 tsp. salt
1/4 tsp. pepper
4 boneless skinless chicken breasts
1 1/2 tsps. barbecue seasoning
4 slices cooked bacon, halved crosswise
1 cup shredded Cheddar cheese
1/4 cup barbecue sauce

Directions:
  1. Heat grill.
  2. Spray sheets of foil with cooking spray.
  3. In a medium bowl, drizzle potatoes with oil.
  4. Sprinkle with Italian seasoning, salt and pepper.
  5. Stir until evenly coated.
  6. Season chicken with barbecue seasoning, and place on center of each sheet of foil.
  7. Spoon potato mixture around each chicken breast.
  8. Lay bacon slices over chicken.
  9. Seal in a tent pack.
  10. Grill over medium heat for about 10 minutes.
  11. Rotate packs 1/2 turn.
  12. Cook 10 minutes longer or until juice of chicken is clear when center of thickest part is cut.
  13. Sprinkle potatoes with cheese.
  14. Top each chicken breast with 1 tbsp. barbecue sauce.
  15. Serve with your camping buddies and enjoy!

Here is the authentic crab cake recipe from a true Marylander! We use only Maryland Blue crab. It must be lump crab meat, also called back fin. In other words, no claw meat.

Also, you must use Old Bay seafood seasoning.  Old Bay is made by the McCormick spice company and is a staple in Maryland cooking.

Traditional Authentic Maryland Crab Cake Recipe

Ingredients:

2 slices white bread, crusts removed and crumbled
2 tbsps. mayonnaise
2 tsps. Old Bay® Seasoning
2 tsps dried parsley
1/2 tsp prepared yellow mustard
1 egg, beaten
1 pound lump crab meat

Directions:

  1. Mix bread, mayonnaise, Old Bay, parsley, mustard and egg in large bowl until well blended.
  2. Gently stir in crab meat.
  3. Shape into 4 patties.
  4. Broil 10 minutes without turning.
  5. Alternatively, fry until golden brown, turning once.
  6. Sprinkle with additional Old Bay.

 With Easter just around the corner, it is important to have a recipe for deviled eggs ready so that you have something to make with all those left over Easter eggs.

Here is a great recipe for deviled eggs that look like baby chicks. Perfect for Easter or just for fun!

Ingredients:

12 hard-boiled eggs, peeled
2 tablespoons mayonnaise
1 1/2 tablespoons yellow mustard
1 dill pickle, finely chopped
1 tablespoon prepared horseradish, or to taste
1 teaspoon pickle juice
Salt and ground black pepper to taste
1 carrot, cut into rounds
12 slices canned black olives, or as needed

Instructions:

  • Slice through the top 1/3 of each egg, ensuring some of the yolk is included in the slice.
  • Carefully remove the egg yolk from the bottom portion of the egg using a spoon and transfer to a bowl.
  • Mix egg yolks, mayonnaise, mustard, pickle, horseradish, pickle juice, salt, and pepper together in a bowl.
  • Fill a piping bag or a plastic bag with a corner snipped with the egg yolk mixture.
  • Pipe egg yolk mixture into the hollowed egg whites creating the 'chick', ensuring there is enough filling to add 'eyes' and a 'beak.'
  • Slice small wedges out of the carrot rounds creating 12 'beaks'.
  • Add a 'beak' to each 'chick'.
  • Slice olive pieces into small squares to be used as 'eyes.'
  • Add 2 'eyes' to each 'chick.'
  • Place the egg tops onto each 'chick' to look like a chick peaking out of the egg.
  • Serve and enjoy!

    Chili Recipe

    Ingredients:

    1 1/2 cups onion soup, prepared from a packet of dry onion soup mix
    1/4 cup bacon grease
    1 1/2 pounds boneless beef round steak, cut into
    1/3-inch cubes
    1 1/2 pounds beef sirloin steak, cut into 1/3-inch cubes
    1 teaspoon salt
    1 tablespoon chili powder
    2 teaspoons ground cumin
    1/2 teaspoon ground black pepper
    3 (15 ounce) cans kidney beans, un-drained
    1 (6 ounce) can tomato paste
    1 (8 ounce) can tomato sauce
    2 teaspoons unsweetened cocoa powder
    1 cup cola soft drink (Coke, Pepsi, etc.)
    1 tablespoon yellow sport pepper sauce

    Directions:
    1. Prepare soup from a packet of onion soup mix according to the package directions, and set 1 1/2 cups aside.
    2. Place bacon grease into a large stainless steel soup pot over medium-high heat, and cook and stir the cubed round and sirloin steak meat in the bacon fat until well browned, about 10 minutes.
    3. Pour in the reserved onion soup, bring to a boil, then reduce to a simmer and cook for 7 minutes, stirring to dissolve any browned flavor bits from the pot.
    4. Stir in salt, chili powder, cumin, black pepper, kidney beans, tomato paste, and tomato sauce. Bring the mixture to a boil, stirring frequently to avoid burning the bottom, then cover, reduce heat to low, and simmer for 1 hour, stirring occasionally.
    5. Stir in the cocoa powder, cola, and hot sauce, and simmer for 20 more minutes. Serve hot.
